Summertime is here and the heat is definitely rising. Whether you're lounging by the pool, or hosting a group of friends at your home, a fresh, summer cocktail is the perfect way to cool off and stay refreshed. Here are my top 5 favorite summer cocktails, of course, Italian style.
- Fresh Peach Puree
This iconic cocktail originating from Harry's Bar in Venice, Italy is simple to make, yet utterly refreshing and will keep you coming back for more. All you need is peach puree and a bottle of prosecco. In a chilled champagne flute, mix 2 ounces of peach puree (add more if you prefer a sweeter cocktail) and slowly add the prosecco. Slowly stir together until blended. While the bellini is easy to make, it is full of flavor and perfect for cooling off on a hot summer day.

The Aperol Spritz cocktail is by far one of the most "Instagrammed" drinks out there. With plenty of beach bars on Italy's Amalfi Coast serving up the spritzer, its bright orange color just screams summer. First, fill a large wine glass with ice. Then, mix 2 parts Aperol, 3 parts prosecco, and finish with a splash of seltzer. Finish it off with fresh slices of orange. It's as easy as 1-2-3, but this drink is as flavorful as its vibrant color.

Sgroppino doubles as a cocktail, as well as a dessert. In a chilled champagne flute, pour 3/4 prosecco. Add a splash of chilled vodka. Next, add in one scoop of lemon sorbet. Top the cocktail with fresh mint leaves and a lemon wedge. Serve immediately, so that the lemon sorbet does not melt. This drink is the perfect way to relax, cool off, and satisfy that sweet tooth!

Yet another one of Italy's favorite spritzer drinks, this one has a story behind it. Legend says that the Bicicletta drink, meaning "bicycle" in Italian, was named after elderly Italian men on their bikes, swerving around as the cycled home after having a few drinks at the local café. To make this cocktail, fill a wine glass with ice. Pour equal parts Campari and a dry white wine of your choice. Add a few splashes of seltzer or soda water, and garnish with fresh lemon wheels. While this is the driest of all of the cocktails I've mentioned, it is a nice refresher for those long, beautiful summer nights.
